The Riesling is the last of the whites from our 25th vintage to be released. Like its sister wines from the 2008 harvest (the Dry Gewürztraminer and the Pinot Gris) it shows a rich, ripe, and intense fruit. From its honeysuckle aromas to its peaches-and-cream flavors, it is perhaps the most opulent Dry Riesling we’ve made, bigger and more full-bodied, viscous and mouth-filling, with a finish that seems to go on forever.
You can sip this wine as an aperitif if you want, but do not hesitate to showcase it as a true dinner wine. It can stand up to the richest, spiciest food you choose to serve.
This wine was made in traditional C & C fashion. 2/3 tank fermented at cold, slow temperatures and 1/3 barrel fermented in neutral French oak. Select yeasts were used to enhance the aromatic qualities in the grape. Fermented dry, this wine still holds the richness that many sweeter Riesling do without the residual sugar. This makes the 2007 Dry Riesling one of the best food wines.
Tasting Notes: Aromas of sweet honeysuckle, peaches, and maybe a little lemon peel. This is a rich wine with a soft mid-palate and a crisp finish.
